WHere is a home-style version of a drink found on the seasonal drinks list. Designed as a batch prepared mix that is packed with tastes associated with Christmas time, rendering it perfect for hosting a holiday party. Reserve the remaining syrup for brunch beverages, puddings, or for another batch of bikinis.
Bikini
Yields 10 servings
To make the Citrus Syrup (yields 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g caster sugar
To make the Premix (produces 850ml, serving 10)
400ml good quality vodka
100ml classic gin
150ml peach schnapps
200ml citrus syrup (see above)
A few cranberries, for garnish
Mandarin essential oil, as a final touch
Method
To prepare the Cordial: Put all the items into a pan, bring to a light boil, agitating to dissolve. After that, remove from the stove and let it to cool completely. Decant into an clean bottle, cap it and store chilled, it can be stored for about a month.
For the Batch Mix: Mix all the liquid ingredients in a large bottle, allow it to infuse for an hour, then pass it through preferably using a fine cloth, to ensure it's fully clarified.
To serve: Pour 85ml of the batch mix into a stirring glass filled with ice, and agitate gently for about 60 seconds to chill. Strain into an cold coupe glass or equivalent, top with some cranberries and finish by giving it a quick spritz of the essential oil over the top.
